How to Stir Fry Veggies and Ground Beef

Quick and delicious, this healthy Ground Beef Stir Fry is packed with vegetables and makes for the perfect weeknight meal or meal prep. All you need are some pantry staples to make the sauce and a handful of vegetables and you'll have yourself a fresh and hearty meal in no time.

One of the reasons I love making stir fry recipes is how freaking quick it is. Whether it's because I need a speedy weeknight dinner or I don't feel like spending a ton of time meal prepping for the week, this easy ground beef stir fry recipe is perfect.

Why You'll Love This Ground Beef Recipe

  • This beef stir fry is packed with healthy veggies that make the recipe super filling. I've got snap peas, carrots, and beef peppers. You can add more if you'd like too! Some days, I add sliced mushrooms or green peas to the stir fry. Some other days I load up on just one veggies. Do as you wish!
  • This stir fry is super easy to make. All you have to do is slice up some vegetables and toss everything into a pan. Building a stir fry is an easy dinner option.
  • Stir fry recipes are meant to be quick and this one is definitely quick. You can throw everything together in less than 30 minutes if you're fast at chopping vegetables!

Ingredients You'll Need

Ingredients needed to make ground beef stir fry.

For the Stir Fry

  • oil — use olive oil or vegetable oil to brown the beef.
  • ground beef — I use lean ground beef for my beef stir fry. It's much easier with lean beef as you don't have to drain any fat or liquid that comes out when you use fattier ground beef.
  • salt and pepper — to taste
  • vegetables — I use carrots, snap peas, and bell peppers. Feel free to change it around.
  • garnish — I garnish with sesame seeds and green onions.

For the Sauce

  • beef broth — I like to use Better than Bouillon.
  • cornstarch — you'll need some cornstarch to thicken the sauce.
  • soy sauce — use low sodium soy sauce.
  • mirin: mirin is a Japanese sweet rice wine, if you are unable to find it, you can try rice vinegar with extra honey
  • honey — for some sweetness.
  • sesame oil — I use pure sesame oil to add a nice nutty flavour to the sauce.
  • garlic — I highly recommend mincing your own garlic instead of buying preminced garlic. I usually minced a whole bunch at once and freeze the garlic to save time.

How to Make Ground Beef Stir Fry

  • Combine all the sauce ingredients and set aside.
  • In a large non-stick skillet or wok, heat up the oil over medium-high heat. Once hot, add the ground beef and saute, stirring occasionally to break up the pieces, until mostly browned.
  • Add the vegetables to the pan and cook for 2 to 3 minutes.
  • Add the sauce to the pan and lower the heat to medium.
  • Continue to cook until the sauce has thickened to your liking. Top with green onions and sesame seeds if desired.
  • Serve with rice or side of your choice or transfer to meal prep containers.

Recipe Tips and Notes

  • Try to cut the vegetables into small bite sized pieces so they cook evenly. Leave them larger if you want them to be more crisp.
  • Veggies can be cut ahead of time and stored in an airtight container to make preparing this ground beef stir fry faster on busy weeknights.
  • Make this healthy stir fry spicy by adding 2 tablespoons of sriracha sauce to the sauce.
  • Ground pork, chicken, or turkey can be swapped in or mixed in 50/50.
  • Cooked ramen noodles go great with the beef if you're not feeling rice!

Make Ahead Tips

  • Meal prep: once cooled, store the cooked beef stir fry in an airtight container for up to 4 days in the fridge. I usually meal prep it with some jasmine rice but cilantro lime rice, coconut rice, purple rice, and lemon garlic rice goes great with this!

  • 1 tbsp oil
  • 1 lb lean ground beef
  • ¼ tsp salt
  • ¼ tsp pepper, or less
  • 1-2 carrot, chopped
  • 1-2 red bell pepper, seeds removed, chopped
  • 200 grams snap peas
  • Green onions
  • Sesame seeds
  • Combine the beef broth, cornstarch, soy sauce, mirin, honey, sesame oil, and garlic and set aside.

  • In a large non-stick skillet or wok, heat up the (olive or vegetable) oil over medium-high heat.

  • Once hot, add the ground beef and saute, stirring occasionally to break up the beef into pieces, until mostly browned. Season with salt and pepper as you do this.

  • Add the vegetables to the pan and cook for 2 to 3 minutes.

  • Add the sauce to the pan and lower the heat to medium.

  • Continue to cook until the sauce has thickened to your liking. Top with green onions and sesame seeds if desired.

  • Serve with rice or side of your choice or transfer to meal prep containers.
